For my brother’s birthday I knew I wanted to make a citrus cake. A citrus cake in the winter is a heavenly bite. This recipe from Rainbow Nourishments piqued my interest as it is made with olive oil, which I had been wanting to try. Her recipes are always spot on–delicious, unique and crowd pleasers. To follow, all its beauty.
I wanted to add a nice color combination of fruit to the top. So: kiwi, mango, blueberry, pomegranate.
