Korma and Spice and Everything Nice

This picture illustrates why I love Indian food. Yes, I was making Indian food again for lunch. A recipe from beloved Vegan Richa that includes 10, yes, 10 different spices and a big knob of fresh ginger. Yes, please!

Heat brings out the flavor.

Cauliflower, sweet potato, yellow pepper and onion. My vegetable choices had a boring color scheme, but oh well.

I couldn’t resist having a portion immediately along with some amaranth I am working on turning over. I garnished it with some cilantro, the fantastic date-tamarind sauce I’ve been working down for a few weeks, and the roasted version of the veggies contained within. Dropping hints…

Like all her recipes, it was spectacular. So flavor-packed and not for wimpy palates. Texture-wise, I think I’d add some tofu next time.
