Jelly Donut Cupcakes

After using half a pad of Post-its in my copy of Veganomicon (which I keep between my mattress and boxspring like a dirty magazine), I returned to my favorite kitchen activity: cupcaking. I don’t know what I like more: tasting the end result or lapping up the wet batter like a parched dog. I must note the particular deliciousness of this cupcake’s batter. Its kick of nutmeg really contrasts the sunny sweetness of the VCTOW basic golden vanilla batter. But these are donut cupcakes… so it’s a super thick batter. Pouring it in the liners proved to be a bit like resistance training with a 10 lb Tupperware dumbbell.
Globbing a spoonful of strawberry preserves in the center of each cupcake, I revelled in using the long neglected jelly in the fridge. To my smile, the heavy batter held the jelly bellies right in the center of the cake. In the end I had 12 perfect little jelly donuts with identity crisises.
