I want desperately to be gone, yet here I am thanks to a terrible decision to teach summer school. So while I lay low, some home stuff. Like the strange orange glow that lured me out of my apartment. Magic.

Pancakes are an easy dinner, especially when you don’t want to turn the oven on. Remember, don’t flip until there are tons of bubbles. Slow your roll.

Then you get a beautiful golden pancake.

I’ve been welcoming ice cream cool downs. Koku non-dairy ice cream is ice cream plus special healthy things: like probiotics (the Vanilla Tart) and adaptogens like Reishi (the Dark Cacao). Perfect for couch time.

I’ve been also feasting on spoonfuls of the S’mores peanut butter from the Peanut Principle in my spare time. I picked it up at the Atlantic City Vegan Food Festival. Look at all that marshmallow. So delicious.

Who bakes a pie in a heatwave? I do… because my Dad and my sister made a birthday request! But I couldn’t try the elaborate geometric design I wanted to attempt as the heat made the dough extremely difficult to work with. I settled for a bunch of circles. I’ll be trying that design after the first frost. Who’s got a Farmers Almanac?

Meh, it looked okay. It tasted far more delicious than it looked. Oh, it is strawberry, blueberry and blackberry pie.

And after the birthday celebration, my siblings portrait redux is complete! So satisfyingly creepy!

Also new in my neighborhood, Taco Wow–which has a vegan taco option! So I bought two for dinner–Grilled Cactus and onions topped with Pico de Gallo, guacamole, cilantro and their secret salsa. They were really good. And the man said that Vegano tacos are very popular and he is interested in expanding vegan options. Hmm, I wonder who he can speak to for advice?? That’s it; I am making another set of business cards.
