Happy Mothers Day!

By special Mom request, carrot cake! I guess my first time baking carrot cake was a success. When I asked my mom what kind of cake she wanted, carrot cake was the choice. All out of cupcake liners, I made a layer cake… which, unfortunately, decided it couldn’t bear to be apart from the heated aluminized steel pan, leaving me a moist, crumbly mess of delicious carrot cake. So it was carrot cake parfaits for all and to all a Happy Mothers Day!
