Go Nuts! It’s Christmas! {Christmas Cookies, Batch 2🤶}

The second selection of my holiday cookie gifts is the Caramel Pecan Bars from Vegan Cookies Invade Your Cookie Jar.  Gosh, this cookbook is such a throwback.  But this is a great addition to a holiday cookie spread because it’s all about richness, texture, and ooey-gooey caramel.  

Here’s the batch all set.  There is a buttery crust under there though you can’t see it.

After setting, slicing is the hardest part.  It takes physical strength, which I lack, and a thick, sturdy knife, which I also lack. 

Requisite photoshoot where the light is better.  Look at all them glistening nuts.

Next time I will opt for more cookie and a little less caramel. 

Rustically cut bars, I’ll call it.

Time to pack them up.
