Finally, Sustenance
High End Vegan in Moab, Utah

After having spent 2 days munching on my road snacks, nary an eatery in sight, Moab’s Desert Bistro was going to be a splurge. And what a place to finally get some sustenance…

My wonderful server was also a vegan and he helped me through related food questions and offered helpful suggestions. Every restaurant needs a vegan representative I have decided. πŸ˜‚ So this is my special treat–a cucumber melon cocktail. So refreshing.

The Citrus salad as I really needed some greens. It had organic mixed greens with fresh grapefruit, lime, oranges, mint, and caramelized pine nuts in agave-cumin-citrus dressing. Slightly embarrassed about the speed of my devouring this.

The Vegan Tower… I mean come on! When this was placed in front of me, I stared–mouth agape. It was two thick patties of quinoa mixed sun-dried yellow tomato pesto, garlic, spinach, Anasazi beans, black beans, roasted red & yellow bell peppers. On top, a julienne of yellow squash, zucchini and carrots, and avocado salsa in a pool of roasted tomatillo-basil sauce and garnished, finally, with paprika coated basil. This most certainly an elevated vegan option.

They even had two sorbet choices for dessert, but I declined. So thankful to experience this meal in a surprisingly not-so vegan-friendly city.
