Days of the Eat

Sunday means I’m making lunch. And my lunch game has been strong lately. I am also finding better light in the kitchen by standing on the counter. Here are recent some of the eats during the week, the ones that are worth the picture.
Kale sautéed with coconut oil and salt is just simple perfection. Then I made mashed potatoes with 1/2 Yukon Gold and 1/2 cauliflower, coconut creamed corn with green pepper, and baked marinated tofu. That is some lunch.
Ok, let’s look again.
A peanut butter tofu curry with millet with roasted broccoli.
Minimalist Baker’s 1-Pot Golden Curry Lentil Soup. Because I need more orange lunches. Doused with Kite Hill‘s Almond Yogurt for some creaminess and tang.
Thursday means I’m ordering in. My usual Channa Saag and vegetable samosas at my local Indian restaurant, Bombay Grill. This is my go-to Indian choice. And my feet got involved with this picture too.
On this other Thursday: Still trying to find Thai I love here in Bay Ridge. This is Glow Thai‘s tarot and corn dumplings. They were good, but a bit strange in this form.
Friday means I’m decompressing. That may mean debriefing a long, strange trip of a week with a fellow teacher or teachers. On this Friday, the best veggie burger around my job (Dram Shop)…
…and some cartoon-y looking draft beers that Homer Simpson would love to knock back.
