Chocolate-Covered Date Caramel Almond Cookies

With a need for a wholesome type of sweetness and with a big tub of Medjool dates to utilize, I made these beauties. The base is just three easy ingredients: Almond flour, which I have a ton of after buying a huge bag before realizing I need almond flour made from blanched almonds–doh!, agave nectar and… water. And my favorite recipe for date caramel (recipe) is bafflingly easy. Make sure to soak the pitted dates for a bit. It makes for a smoother consistency.

It pipes very well. Here it is on top of the almond cookies. Though I don’t enjoy that it is brown on brown, it’s ok.

Time to envelope in chocolate.
