Baby Beet Cakes

With some cooked beets I had to use… and a day off for some doctor appointments… I tried out my new baking pan to make some cute little beet cakes. Using this recipe, I achieved beautiful, moist and not overly sweet cakes.

Not as potent as freshly roasted beets, the fridgerated package of cooked beets kinda lacked in beet flavor

I had a little bit of buttercream left from Thanksgiving so I tried out some match and beet powders to color it… because I will soon be using them in my holiday treat boxes.

They did a great job!

So the piping was supposed to look like a rose… but my rose tip was acting very strange. So I made the frosting look like beets! And it was the perfect amount of frosting.
