One final breakfast at the end of my Long Island excursion… an easy, foolproof delicious vegan breakfast entree at the Lindenhurst Diner. Their all-vegan menu allows weary travelers like me to get a fuss-proof and fantastic meal. The diner is the best of eateries… unpretentious, expansive menu variety and always-attentive service that knows when to not pay too much attention, if that makes any sense.

I got the LD Tofu Veggie Scramble and it was exactly what I needed.
