Annual January Pantry Turnover:
Almond Paste Chocolate Chip Cookies

File this under “First World Problems.” You buy a tube of almond paste, use what you need and then there it sits, the last half inch of almond paste getting hard in your fridge. Too little to use for another recipe, too much to discard. During my annual January Pantry Turnover, I had the idea to dice the leftover nub and add to my favorite chocolate chip cookie recipe. Because, how delicious are nuts in chocolate chip cookies? I am surprised I hadn’t seen this before. Because it’s so darn good.

Cookie dough perfection from my go-to.

After scooping cookies onto baking sheet, sprinkle with salt flakes and push those almond paste pieces into the cookies. I only put about 3-4 in each.

I had to test them out, of course. But this batch was going to work with me after it was brought to my attention that I baked way more goodies the last school year.

For my work family… we deserve all the cookies!
