A Very Pretty Birthday Cheesecake

I have never made a vegan cheesecake. But when my guy requested an attempt for his birthday, I turned to Rainbow Nourishments, whose vegan recipes are spot on and don’t involve super-processed ingredients. But I strayed a bit… at the expense, as it turns out, of the overall taste. My offense: too much vanilla flavor. First, I didn’t realize the vegan yogurt I used was vanilla flavored; then, I used a an entire vanilla pod in lieu of vanilla extract. It is much more potent! Despite this, the cheesecake set well and looked divine. To follow, some images of its construction.
