A Mother’s Day Carrot Cake πŸ₯•πŸ‘©β€πŸŒΎ

I followed this fantastic recipe from Loving It Vegan to make my mother a cake on her special day. And I am happy to report that I did not scrape my knuckles on the grater while I grated the carrot that is the predominant source of moisture for the recipe. I used the fine part of the grater for a smoother texture and went easy on the walnuts. After topping with my most favorite vegan frosting (noted here), it was ready to go!
