3-Ingredient Marshmallow Fluff

Unbelievably delicious banana soft serve with three ingredients: bananas, water and pure vanilla extract. Then to top it–thick, gooey marshmallow fluff made with three ingredients: aquafaba, sugar and pure vanilla extract. But this was craving fulfillment that was two-days in the making as it requires frozen bananas. But oh what an amazing transformation of those riping bananas in your fruit bowl.

Here it is, the easy-peasy recipe for banana soft serve. But you need a high speed blender to aerate it properly… that’s kind of the catch.

Banana Soft Serve

6 ripe bananas, peeled and frozen solid

1/2 cup water

1/2 teaspoon pure vanilla extract

1.) Break frozen bananas in half and load in the high speed blender.

2.) Turn on at low speed then increase to medium-high. Pour in water and vanilla, then increase speed to high. Use the plunger thing to push the banana around in the blender. As the bananas on the bottom soften it will become easier to push the others down to the blade and get everything creamy.

3.) Scoop out soft serve into a freezer-safe container and set in the freezer as you make the marshmallow fluff. Use this recipe.

4.) [Optional] While this is whipping, you can make a fruity sauce. I had some strawberry basil jam and I put about two tablespoons in a sauce pan and cooked it over low heat until it was the consistency of a sundae sauce. There is no need to add anything.

Voila! A delicious vegan sundae, real easy. Add any kind of toppings you have laying around. And maybe you can even try throwing in some mixables in the high speed blender when you’re making the soft serve. Get crazy–this is a great base recipe.
